Because that's the English language, but Craig as a name is pronounced how it is spelt.

For clarification, are you saying that names are always spelled phonetically, and you're using Craig as an example, or are you only referring to Craig specifically?

We spell colonel but pronounce it as kernel Apparantly those who wrote the books weren't thinking at the time and we've just learn to go off what they wrote

Craig is pronounced 'Crayg' as in to rhyme with Thaig or William Hague.

I pronounce Craig as Crayg and not Creeg. I think its just different people and their respective regions and how their language has developed.
