Ingredients:
- Corn tortillas. If you use wheat/flour tortillas that makes it a burrito
- Canola Oil
- Monterey Jack cheese (mild cheddar works too if you prefer)
- Onions (optional)
- Garlic
- Cilantro
- Flour
- Fresh roasted or frozen green chile (not canned)
- Frozen red chile

Directions:
Sauce--
- Brown some flour in the bottom of a pan with a little canola oil. Add in the green chile. Repeat in another pan with the red chile.
- Cook and mix together until you get the desired texture.

Enchiladas--
- Put enough canola oil in a small saucepan and heat to fry up some tortillas.
- Dip the tortillas into the oil briefly, set on paper towels to drain.
- Fill the fried tortillas with a mixture of cheese, onions, garlic and cilantro... you can also add a few refried beans if you want.
- Roll them up and place in a baking pan.
- Cover half with the red sauce and half with the green sauce.
- Sprinkle the top with cheese
- Bake until cheese is melted.

Optionally add a fried egg on top (over medium recommended)

Hey, el tino, how about your recipe on home made tacos. I love the ones I make not that s*** from Taco Bell but could use some expert instructions for better tacos.

hmm i don't have any instructions on those, except i prefer tacos with soft corn or flour tortillas to hard shells and I prefer chunks of marinated meat to ground meat.
