Spinach Beef Lasagna with Tomato Sauce

Spinach Beef Lasagna with Tomato Sauce

Ingredients:

2 pound lean ground beef, round or chuck
1 med chopped onion
4 ounces sliced mushrooms
2-3 cloves minced garlic
1/2 teaspoon dried basil, crushed
1/2 teaspoon dried oregano, crushed
salt and pepper
1 can (14 ounces) tomato sauce
1 can (28 ounces) tomatoes, drained
1 can (5 ounces) tomato paste
1 egg
1 package (10 ounces) chopped frozen spinach, thawed and well drained
1 1 pound tub dry curd cottage cheese
10-12 lasagna noodles, cooked and drained
8 ounces shredded mozzarella cheese
3/4 cup grated Parmesan cheese

Preparation:

Meat sauce:
In a large skillet, saut? ground beef, drain fat and set aside. Saut? onion, garlic and mushrooms. Stir in basil, oregano, 1 teaspoon salt and 1/4 teaspoon pepper. Add tomatoes, tomato sauce, and tomato paste. Stirring constantly, bring mixture to a boil, simmer until quite thick and remove from heat. Add ground beef to mixture and stir well.

Spinach mixture:
Beat egg with 1/2 teaspoon salt; stir in well drained and squeezed spinach and cottage cheese.

Spoon about one-third of the meat mixture into a greased 13x9x2-inch baking dish. sprinkle with 1/3 parmesan cheese. Arrange a layer of lasagna noodles over the meat mixture. Top with all of the spinach mixture, add a second layer of noodles, then another one-third of the meat mixture and more parmesan cheese. Top with remaining lasagna noodles and remaining meat mixture. Sprinkle evenly with remaining parmesan and the mozzarella cheese.

Bake at 350? for 40 to 45 minutes, until cheese is bubbly and lightly browned. Let lasagna stand for about 10 minutes before serving. This recipe serves 8.
