Pancake Disaster

Does anyone have a fool proof method for making crepe pancakes, I tried last night but it just wasn't happenin'!! They were way too thick so I added more milk - big mistake!

6 heaped spoons of flour
3 eggs
a splash of milk a
a splash of water

that's my dad's recipee and it's always worked for me...the only problem is my pancakes often end up on the cieling
