Unused AI animations in Resident Evil 2 remake

Some of the monsters have certain attacks or animations that weren't used. You Tube users have found them through search and discovery, some have been unearthed through Garry's Mod.

For example, through Drgbase I've learned Mr. X has a second finishing move in which he lifts the player up by the throat and punches them in the head with the other fist. Was this an invention of the designer or did Capcom leave this move in the files?
