So to me that sounds totally redundant.

Carnitas de carne: Little bits of braised pork made from meat.
or
carnitas de cerdo: Little bits of braise pork made from pork.

I was pretty sure the "carnitas" part made it pork meat. If it is braised beef or another animal is usually called something else.

I mean Carnitas has a different flavor based on the region, based on the spices used and how much lard is involved.

And yes I almost said how much fat the pork has or if they decide to fry bits of the meat in lard. Well technically if the fat came from the animal you are eating or its little piggy friend its still lard.

are you trying to ask between flavors? I'm interested, I'm not really trying to be pedantic though I just realized I might sound that way, sorry.
I tend to like the carnitas, of the Arizona border region. Both new Mexico and California tend to not be as good to me. and Tex-mex is just wrong,

so, is that like turkey bacon?

like carnitas translates to something like "pulled pork" so, it is like making pulled pork out of beef. Where if you cook a cow, like you would a pig, you could end up with brisket... which is like pulled pork made of cow.

now if you were using the words: adobada, adovada or asada then yeah you can totally make that out of different meat. Or even Mole, as that is about the sauce not the meat.

Like now I am totally confused about you think carnitas are, and is that even the same food I think it is.
I mean my Spanish has some issues, but generally my food translations are pretty good even across regions.

Oh, so you are referring to your own substitutions? that would make sense.
Down here in the southwest, when people switch the meat it switches the name of the dish... As in picking the "carnitas" option is the way to avoid beef or chicken on the menu, for those with food avoidance/preference issues. Here it guarantees you are getting pork, but not necessarily what part of the pig. Carnitas de Criadilla has pork testicles and Carnitas de Machitos has pork intestines. These things I learned immediately to also avoid. Though most is really just pork shoulder/butt, I'd worry closer to Mexico at a taco truck.

All I know is that when I go to my favorite Mexican joint and order "Carnitas", they bring me pork.
