Does anybody love salsa? Here is a recipe I tried today it and was really good and easy to make.

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
12 tomatillos
1/2 cup Yellow Onion -- Chopped
5 jalapeno Peppers --
1 1/2 teaspoons garlic -- Minced
1 1/2 teaspoons Fresh Tarragon; Chopped -- OR
1/2 teaspoon Dried Tarragon -- Crushed
1/2 teaspoon Sugar
1/2 teaspoon Salt
1/8 teaspoon Black Pepper
3 teaspoons Fresh cilantro -- Chopped
2 teaspoons lime Juice
2 teaspoons Olive Oil

Remove the stems from the jalapenos, and carefully split each pepper and
remove the seeds. Remember to wear rubber gloves!
Coarsely chop the tomatillos and place in a bowl. Add all the other
ingredients and mix well.

Mmmmm that sounds good I loooove salsa. I think I might try that. Out of curiosity, how spicy was the one you made?

It came out pretty hot. Next time I will use less peppers lol

Salsa Borracha (Drunk Salsa)

"This is a special salsa that you can serve with Mexican tacos, fajitas, chicken or over eggs. Viva Mexico! Leave the seeds in the peppers for a spicier salsa." Original recipe yield: 8 servings.

INGREDIENTS:
4 fresh tomatoes
10 fresh jalapeno peppers, halved lengthwise and seeded
1 (12 fluid ounce) bottle Mexican beer
1/2 cup water, or as needed
1 clove garlic
1 slice onion
salt to taste



DIRECTIONS:
Place the tomatoes and jalapenos into a saucepan, and pour the beer over them. Add enough water so that the tomatoes and jalapenos are covered. Simmer over medium heat until soft. Remove from heat, and let cool slightly.
Transfer the tomatoes and jalapenos to a blender, and add the garlic and onion. Pulse until well blended. Add some of the cooking liquid to help with blending if necessary. Taste, and season with salt.

Suicidal Fancy Salsa

Skin and chop 6-8 nice size Italian plum tomatoes to desired size,
Peel and chop fine 1 good medium size vidalia onion,
Puree 1 nice size habanero pepper(ripe),
Chop 2 green onions very fine using only green tops,
Chop fine 1 teaspoon only cilantro,
Juice 1 lime using only 1 tablespoon lime juice.


Mix all ingredients and add 1 teaspoon sugar, 1/2 teaspoon salt,
1/2 teaspoon fine ground black pepper. stir well and refrigerate
overnight and stir well before serving.

Serve with taco chips or better yet, lay taco chips
in single layer on microwavable dish, cover with salsa
as thick as you like and cover with grated cheddar cheese
and microwave for 60-90 seconds until cheese is melted.

Present with your favorite draft beer and your friends will
love you forever. Do not serve this salsa to any child! Enjoy

SALSA A LA JEAUX

Ingredients:

One 20 ounce can of Hunt's all natural peeled Whole Tomatoes
One large jalapeno
3 cloves of garlic
One teaspoon of salt (or to taste)
One tablespoon fresh cilantro

Directions:

Boil jalapeno until soft. Finely chop garlic and boil in 6 ounces of
water until there is 2-3 ounces left.
Blend jalapeno, garlic (with water), and cilantro thoroughly in blender.
Drain the can of tomatoes and combine tomatoes and salt with previous
mixture and blend to desired consistency. I suggest tapping the pulse
button about three times. Chill in refrigerator about 1 hour.
Works great as a dip with Tostitos restaurant-style tortilla chips.
Enjoy!

Cilantro Lime Salsa

1 Can Del Monte Fresh Cut Diced Tomatoes
1 Can Ro-Tel Tomatoes and Green Chiles
1/2 Teaspoon Dried Cilantro
Juice of One Lime
One Bunch Green Onions chopped
Dash of Tabasco (I like more)
1 Tbsp. Corn oil

Combine all ingredients and chill.
Serve with tortilla chips or on baked potatoes.

"Addictive Salsa"

1 - Red onion
6 - Roma tomatoes
1 - Yellow pepper
3-4 - Jalapenos
1 Tbsp - Fresh cilantro
1 tsp - Sugar
3/4 tsp - Salt
1/2 tsp - Garlic salt
1/4 cup - Orange juice

Chop ingredients to desired consistency, and combine in bowl,
add sugar, salt and garlic salt. Pour orange juice over top
and stir again. Cover and refrigerate for at least 2 hours.
Enjoy!

Hint: Heat level can be reduced by seeding jalapenos.

Serrano Chile Salsa



6 red tomatoes - roasted in a pan
4 red Serrano chiles - roasted in a pan
3 cloves of garlic
salt and pepper - to taste

Let ingredients cool, then liquidize everything to a semi-fine
consistency. Sounds simple but tastes wonderful!
Enjoy!

"San Antonio Salsa"



6 chopped tomatoes
3 green onions, chopped
1 small jar taco sauce or your favorite salsa,
hot or mild (I love the hottest!)
Approximately 5-6 tablespoons of vinegar,
(use enough to satisfy your own tastebuds -
I have used up to 1/4 cup)
Dash of pepper
2 dashes of Tabasco sauce
Salt to taste
Let stand for about 15 minutes before serving.

Serve with tortilla chips. Enjoy!

"Gina Lopez's Fresh Salsa"



Fresh ingredients are the key to this wonderful salsa.
The amounts can vary depending on your tastes.

4 - 6 fresh tomatoes - seeded and finely chopped
2 - 4 fresh jalapeno peppers - seeded and finely minced
6 - 8 green onions - white parts only, finely minced
2 - 4 Tbsp fresh cilantro - finely minced
salt and pepper - to taste

Mix everything together and let sit for at least
30 minutes before serving. Enjoy!

"OOEEE...BABY!" SALSA

1 lg can (32oz) tomato sauce
1 med size onion - diced
1 Tbsp fresh cilantro - chopped fine
2 - 3 fresh jalapenos or habaneros - chopped fine
2 med size tomatoes - skinned, seeded and chopped
6 green onions (green part only) - chopped
juice of 2 limes
1 small cucumber - peeled, seeded and chopped fine
black pepper - as much as you'd like
4 - 5 shakes of Tabasco (or your favorite) hot sauce

Tortilla chips (try blue corn tortilla chips, too)

Directions:
Combine all ingredients, except chips. Stir together.
Let sit at room temperature for an hour. Stir again. Enjoy!

"GREEN CHILE SALSA"

6 medium tomatoes, peeled, seeded and chopped
1 medium onion - chopped
1 Tbsp fresh parsley - chopped, or 2 tsp dried
1 tsp fresh cilantro - chopped fine or 2 tsp dried
6 - 8 green chiles, roasted, peeled and chopped fine or
2 sm cans Ortega diced green chiles
8 green onions (green part only) - chopped
2 (4oz) cans of tomatillo sauce
5-6 dashes of green Jalapeno Tabasco Sauce
juice of 1 lime

Directions:
Combine all ingredients and mix together.
Makes about 4 cups. This can be used as a dip or poured
over enchiladas, then baked. Enjoy!

Variation: Sour Cream may be added. The amount added can
vary, but generally start with 1 cup of sour cream.

Ingredients Needed For Knock`em to the Ground Salsa (HOT!):

2 Large tomatoes
1 can (8 oz.) Chiles Chipotles in Adobo Sauce
3 Green Jalapenos, cut in half (do not seed)
5 cloves garlic, peeled
1 Large white onion
1 T. Vinegar
1 bunch cilantro
1 T. Salt


Directions For Making Knock`em to the Ground Salsa (HOT!):
Directions:

Roast tomatoes over open flame until skin is charred.
Remove skin

Place all remaining ingredients in a food processor
(do not use a blender)

Pulse carefully until all ingredients are coarsely chopped
This stuff should be chunky

History:

Made this one day when I was looking for a hotter than
usual salsa to extract revenge on someone. This did it.

Stories:

Had 2 Mexicans at work back off from this stuff.
If you want it hotter (like I like sometimes) substitute
6 fresh Habanero peppers for the Jalapenos

Guaranteed to make strong men cry, women faint, dogs
bark, cats prowl and little children run for Momma. Has been
known on occasion to repel intruders and other pests.

Do not serve to a condemned man for his last meal.
Will take to long to clear his system.
