Jills Special Mac and Cheese Dinner with Pizza Flavors

(takes about 30 min to 'putting it on the table' done)

1 box Kraft Macaroni and Cheese (I like whole grain)
1 8 oz can tomato sauce (I use 'no salt added)
1/3 cup Parmesan Cheese grated
1/2 medium yellow onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
4 oz fresh mushrooms, diced
1 T butter (or any 'light' butter substitute)
1 tsp garlic powder
1 pkg Hormel Turkey Pepperoni Minis (or any 4-oz pkg of pepperoni, diced, you might like the 'spicy' kind)
3 tsp Italian Seasoning
1 tsp Fennel Seed

Saute the onion, bell peppers and mushrooms over medium-high heat until no longer hard and crunchy (I put a lid or foil on top of the pan to let it 'steam', that seems to help). Make the Mac and Cheese with the butter and cheese packet. Add the tomato sauce, veggies, pepperoni, parmesan and garlic powder to the mac and cheese and stir. Warm through over medium low heat, serve with a nice salad some fresh fruit

Variation: skip the cheese packet and use 3 oz of cream cheese or neufchatel instead. Also, you can mix it up and use any favorite pizza toppings like sausage or canadian bacon or olives, etc, etc. Heck, throw in some mozzarella if you like
