How do you make your Pork roast?

I'm going to be making my partner a pork roast next Sunday and I want to know if you can share any secrets with me.
I've looked around at the basic sort of recipes that's on the internet but nothing really looks that interesting.
So if you know of any interesting things to do with a nice piece of Pork.. Post away!

Best to keep it simple with pork, if you don't mind the loss of crackling then a good piece of pork loin is the best as it's very soft and moist. Rub on a mixture of butter, salt,pepper and sage and then slow roast... mmmmmmm

Mmmmm... I heard Lemon was better than butter on pork..

Never had lemon with pork so I couldn't comment.. by all means try it!

You'd use the lemon to stick the salt on..

You really don't need butter or lemon to make the salt stick as the joint is moist anyway, the butter just works well with the sage.

I know what u mean! But at my out place my flatmates always wanted pork so we had it about once a week! [too much!!]

Now that I'm not there anymore I haven't had it in a while but now I'm really craving it!

pot roast is nice with carrots, celery and onion, you chuck away the veggies it roasted with but the flavour goes into the meat.

Personally I wrap pork up in foil with butter and paprika and cook it very slowly for several hours. Then when done fry all sides to brown it off. Then leave it for 30 minutues covered up to rest before carving.

Arghhh went to buy some pork but my local supermarket had run out, settled on chicken in the end!

slit the skin and rub salt and oil it. tyme is nice too. put it up on a rack so the oil and fat renders out of it
