I am not sure of the laws where the crime happened but if it happened here they could take Amanda Knox to civil court and if they won a settlement the money Amanda were to get from sales of the book, movie etc would be given to the family of the victim. So if the settlement was 1 million dollars and Amanda made a profit of 2 million, she keeps one million and the family of the victim gets 1 million. If the settlement was say 5 million but Amanda made 2 million, she would owe them 3 million.
I figured it was something like that. No amount of money could make up for losing Meredith, but at least it would give them some closure to get a guilty verdict even if it's only in a civil court.
As you said though, not sure if it would work, done in the USA for a murder that happened in another country.
