The most important part is always the meat itself. Typically the meat offered at the butcher shop is far superior to anything you'll get at the super market.

The butcher can also direct you to the best cut depending on how you plan to cook your roast.

Here's one of my dishes...

Add just enough oil to cover the bottom of crockpot.
Peel & chunk potatoes, enough to cover the bottom of crockpot.
Add a layer of baby peeled carrots.
Add a layer of sliced onions.
S&P to taste.
Add about 2 cups of water (or broth)
Season pork roast to taste and place on top of vegetables.
Cook on high one hour and turn to low, cooking until fork tender. You can also just cook on low the entire time.

If you wish to make a gravy, remove pork roast when fork tender and also remove vegetables. Turn crockpot on high. In a small bowl whisk together about 3 - 4 TBSP flour with 1/4 cup water. Add mixture to crockpot and whisk until thickened. Also season with S&P and thyme while whisking.

With pork i just put it in a pan with a bit of water, cover and shove it in the over for about four to twelve hours. 12 fr a slow cook, and wow is it good. But pork has its own salt so i never add to it. I uncover it to crisp the skin before taking it out and then let it rest before cutting into it so its juicy and tender.

I use a cooking bag. Toss roast in, potato's, carrots, onions, few strips of bacon on top, water.
