With the vents open top and bottom the air flow is greater so more oxygen thus helping the burn. Think of it a little like the bellows used to stoke the fire... though of course the air flow isn't that strong.

I have a Big Green Egg. Uses hardwood charcoal; the real stuff...no briquettes chemical binders, fuel or other crap.

Works great! Lately I've done various fish (salmon, halibut, rockfish, etc), chicken, beef (burgers & steaks), various vegetables (zucchini, potatoes, bok hoy, etc), game hens, sausages... pretty much use it every day except when it is raining.

Marinades are typically olive oil based with some combination of soy, lemon, various garden herbs (from mint to basil, rosemary to oregano). Fish typically gets 20 to 30 minutes of marinade, chicken an hour. Beef gets sea salt and sometimes coarsely ground black pepper... never any marinade, BBQ sauce or other spices. If you get good beef, all you need is salt.




I can see how an egg shape may have certain advantages to air-flow and radiant heat.

(at 700dF, you could melt lead!)

Exactly!

I use "If You Care" Firelighters they are 100% biomass (wood & vegetable oil) once the charcoal is going the nugget is long gone before you start to cook.

I also keep them for "emergencies" when I go camping or hiking... part of my mini survival kit that I take with me...

So far just baked potatoes thrown in while cooking the meat.

Without the open flame, I think shish-kabobs would lose an element

Yeah, I love shish kabobs. I have just a standard open grill.

Yes...

Potato wedges > basically cut a potato lengthwise into quarters. 1st time I boiled them for about 5 minutes, then grilled them. The idea was to save time, but now I just put them on before the meat... about 3 min per side. I like to put salt, pepper and olive oil on them... and sometimes finely ground rosemary.

Baby Bok Choy > olive oil, sea salt, garlic... maybe a bit of soy sauce in stead of the salt... about 3 to 5 minutes per side.

Zucchini > slice lengthwise... depends on how big they are as to how many slices, but not too thin. Again, olive oil, salt... maybe pepper... maybe garlic. Yellow squash the same way. No specific time... I keep an eye on them as they don't take too long.

Jalapeños >

Peaches > surprisingly good... no spicing needed.

I haven't done carrots or parsnips yet, but probably will... Also I plan to do avocados... and saw a recipe for grilled watermelon...

Looks like I need to drop in on chaski for some grilled fish.

Grilling is tasty but a mystery to me as far as actually getting something edible.
It’s like coffee. I love when other people do it, but I f*** it up every time.

Broccoli needed more time - either blanching beforehand, or on the grill afterwards.

Ribs weren't fall-off-the-bone like last time. The difference: I did the in-between prep rather than my wife ... and then she tells me "I (she) never follow the directions"
She says more apple cider ...

I don't recommend on a grill that your meat should be kill first, before you grill on bbq stove.

years ago, at my brother-in-law ran over a good size roadkill vermin, and damn thing woke up on the grill cooking. thank god, my brother-in-was a smart cookie. the vermin tried to get off the bbq stand, and my brother-in-law hit with his shovel.

damn thing, It was the best damn meat, I've had in my life.

I grilled some salmon a week or so ago... "fresh off the boat"..,

Using my BGE... I swear it was like eating salmon flavored butter!!!

I will never order salmon in a restaurant ever again!

Note: Not bragging... it was totally luck... I know I'll never cook it that good ever again.

I tried to cook salmon in pan once, the damn fish wasn't dead. I did norman bates on it. I killed it with my frying pan. I never cook a salmon since.
