Healthy eating recipes....

Post yours here, to help out with everyone on TFS weight***chers!

Here's some of mine to start you off:

Curry. Serves 2-3
INGREDIENTS:
2 chicken breasts.
1 onion, chopped.
Chilli, garlic and ginger to season.
2 teaspoons of Pataks balti paste.
1 teaspoon of Pataks madras paste.
1 tin of tomatoes.
1 chicken or veg stock cube.
2 peppers, chopped.

~ Chop chicken into chunks and fry.
~ Fry onion with chicken.
~ Add chilli, garlic and ginger to your preference.
~ Add the spoons of curry paste.
~ Add the tin of tomatoes and stock cube.
~ Add the peppers and bring to the boil.
~ Once at the boil, put into a large, microwaveable bowl/dish and stick in the microwave for 25 minutes. Microwaving stops it reducing too much.



Easy chilli.
SERVES 2-4.

INGREDIENTS:
500g of lean mince beef.
1 finely chopped onion.
1 clove garlic, chopped.
400g tin of tomato soup.
400g tin of kidney or pinto beans (I use pinto beans as I hate kidney beans!), drained.
1 beef stock cube.
1 teaspoon hot chilli powder (or more if you like it hot!) or crushed chillies.
1.5-2 teaspoons of cumin.
100ml boiling water.

OPTIONAL: USE 1 TABLESPOON OF BEEF GRAVY GRANULES TO THICKEN IF NEEDED.

~ Fry mince and chopped onion with no oil. Cook until browned slightly. Drain excess liquid/oil.
~ Add garlic, soup, beans, stock cube and cumin. Season with salt and pepper, mix well.
~ Add 100mls boiling water or enough to come halfway to the mixture (this allows all the moisture that will come from the beef and onion).
~ Simmer over a low heat for 20-30 minutes. Thicken with gravy granules if needed, stir then bring back to a simmer.


Healthy spag bol.
INGREDIENTS:
500g lean mince beef.
2 small onions, 1 large onion, chopped.
2 400g tins of chopped tomatoes.
1.5 Knorr chicken stock cubes (yes, they have to be Knorr)
1 clove garlic chopped/ plenty of garlic powder.
Olive oil.

*ADD SPICE SUCH AS CHILLI OR PAPRIKA TO GIVE IT A KICK IF YOU LIKE*
~ Heat oil in a pan and add onions and garlic, stirring constantly.
~ When onions are translucent add mince and brown.
~ When mince is brown, drain off excess liquid and add the stock cubes, stirring so they dissolve.
~ Add 2 tins tomatoes and simmer for 20 minutes.

Meatballs with tomato sauce.
INGREDIENTS:
MEATBALLS:
1 tablespoon of olive oil.
1 small onion, finely chopped.
1 clove garlic, crushed.
500g lean mince beef.
1 tablespoon freshly chopped herbs or 1 tablespoon rosemary.
1 egg, beaten.
Salt and pepper to season.

SAUCE:
1 large onion, chopped (optional).
1 clove garlic, crushed.
3/4 of a light mozzarella ball, grated.
1 teaspoon of sugar.
2 400g tins of tomatoes.
Salt and pepper to season.

~ Heat the olive oil (use frylight spray oil to be extra healthy) on a gentle heat and add the onion and garlic. Cover and sweat for 4 minutes until soft and a little golden. Allow to cool.
~ In a bowl, mix the (beaten) mince with the cool, sweated onion and garlic. Add the herbs and beaten egg. Season with salt and pepper.
~ Divide into meatballs and start to cook on a low heat, keeping an eye on them and turning whenever needed while you do the sauce.

~ For the sauce, sweat some onion and garlic in the same way as before, using spray oil to be extra healthy instead if you like.
~ Add the tins of chopped tomatoes, seasons with sugar, salt and pepper. ADD SOME CHILLI AND GINGER IF YOU WANT IT SPICIER!
~ Cook the mixture for approx 20 minutes or until tomatoes reduced.

~ When all is cooked, place the meatballs in an ovenproof dish, with the tomato sauce poured over them and top with the grated light mozzarella.
~ Place under pre-heated grill until cheese has melted.
~ Serve with spaghetti or fusilli.

This is one I found online that's yummy, especially with looooads of basil

Buffalo Chili - from Nutritionist Ashley Koff
Makes 12 servings! 140cal/serving!

Ingredients
- 1/4 canola oil
- 1 small red onion or 1/2 sweet onion diced
- 3 medium carrots, peeled and cut into 1/2 inch slices
-2 small yellow squash, scrubbed and cut into 1/2 inch slices
- 2 small zucchini, scrubbed and diced
- 1 teaspoon dried or fresh coriander
-1 tablespoon dried chili powder
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper or paprika (optional)
- 1 1/2 pounds ground buffalo meat
- 2 cans fire roasted tomatoes, chopped
-3 cups mild or medium salsa

in a deep sauce pot, heat the oil over medium heat. saute the onion then add the carrots, squash and zucchini, stiring often until the edges are brown but the veggies are not soft. toss some of the coriander, chili powder, cumin and cayenne or paprika into the veggies as you cook them!

transfer the veggies to a medium bowl and set aside.

add the buffalo meat to the skillet and cook on medium heat stirring often to brown. if the meat sticks to the pan add a little canola oil to the center of the pan and heath it up. return the buffalo meat and veggies to the pot and add the tomatoes in their juice. pour int he salsa and cook over medium heat for 15 minutes stirring frequently. reduce heat to a simmer and cook for 40 minutes. or you could refrigerate at this point and reheat on low for 20-30 minutes stirring often before serving.

frozen skinless chicken breasts thrown into a crock pot.

cover with bottle of fat free italian dressing (or raspberry vinigrette)

cook on low for 6-10 hours depending on breast thickness.

Chicken breasts.

Cut them in half along the bottom.

Cover them entirely in Fajita mix.

Put in a baking tray with some olive oil to keep the chicken moist, but not too much as that will add calories.

Cover the baking tray with tin foil.

Put in the oven on a medium-high heat for about 20 minutes

Serve with new potatoes.

Cheap, easy and low in calories.

Another way to do this recipe is to marinate the chicken with crushed garlic and with a couple of tablespoons of the Pataks paste for a few hours (overnight is best),I usually add a pot of low fat plain yoghurt to this also + mix together.

I also lightly fry the onions and then add chicken,toms,different paste ect.. and a bit of butter,cook on medium heat for 25 mins and add 100ml of cream 5 mins before the end of cooking time.But obviously this is no good for a low fat meal.

You could always substitute the cream with something low fat like natural yoghurt...thanks!

Grilled Mackerel with Salsa Verde

de-bone mackerel or get fishmonger to do it,really simple to do loads of vids on youtube to show you how.

lightly salt (rock salt) both sides of the fish,place in a hot pan (a tiny drizzle of olive oil) skin side down for 2 mins turn and add a squeeze of lemon/lime juice and cook for about another min>> serve

Salsa Verde -

Fresh Parsley
Fresh mint
Diced garlic about 2 cloves (or to taste)
Capers (as many as you want..to taste)
DRIZZLE of olive oil
Anchovies diced (optional)

1/3 of mint to parsley mix ingredients well into a kind of paste and eat with fish alongside a salad (recommend watercress salad).

EDIT* - boiled new potatoes with a little garlic crushed over them.

Here is a super easy crock-pot salsa chicken recipe

4-6 boneless, skinless chicken breasts
1 jar of your favorite salsa
1 cup frozen corn (you can use drained canned corn, but it doesn't hold up as well during the long slow cook imo)
Taco or Fajita seasoning. I'm personally a fan of Alton Brown\'s taco seasoning
1 can drained black beans (optional)

1.) Rub the seasoning onto the chicken breasts. If you made the Alton Brown seasoning, be sure to go easy on it the first time; it has a pretty good kick.
2.) Place the chicken, salsa, corn, and the beans if you are using them into a crock pot.
3.) Cook on low for 6-8 hours.
4.) Serve with side dishes of your choosing. Personally I like to place the chicken and mixture on some brown rice.

This is super easy and can be prepared in under 10 minutes before work and will be ready when you get home.

cockroaches on ritz crackers

6 to 10 dead cochroachs

any sort of bbq or taco sauce

1 sledge hammer

put the cochroachs on wooden kitchen. using the sledge hammer and smash the crap out of them, if they starting moving, it that then that sucker again.

put a couple of them on one of ritz cracker, and put sauce them. put another ritz cracker on top of the roach. a tasty sandwich to me!

damn, sound delicious to me!
