Tomato pie

My mother made this and it is my new most favorite way to eat tomatoes! We like our food a bit spicier so I added a few things to mine but here is the basic recipe:

3-4 small or 1-2 med. sized tomatoes
1 frozen pie crust
1/2 tsp. basil
2-3 chopped scallions
salt & pepper, to taste
1 cup of mayo
2 cups of shredded cheese (we use the mexican mix)

first you peel and slice the tomatoes to about 1/4 inch thick. I also deseed my tomatoes as well. Put them in a colander or similar to drain excess juices, sprinkle with salt. Bake pie crust per directions and set aside. When tomatoes are drained arrange them in the bottom of the pie crust and sprinkle in the basil, salt & pepper (and other seasonings you might like, we add chile powder, garlic, parsley, etc.) Add scallions. Mix mayo and shredded cheese together combining thoroughly, spread over top of pie making sure to 'seal' edges. I usually work from the outside in so as not to disturb the ingredients.

Bake at 375 till brown, let stand 5 min. and serve! Its soooooo good!

Oh its awesome! Drain your tomatoes very well or else your pie will be more runny.

I absolutely love tomato pie and yours sounds like a very good recipe. Thanks for posting it. The one I have had has sliced bell pepper on top but yours sounds better. I think I am going to have to go to the store and get some items to make it. Yum

By the way is that fresh basil or the dried type?
