When it's well defrosted put the beef in a pot with no liquid other than some olive oil. Let the beef get sealed but not too browned in the hot pan. The add just enough water to cover it. Bring it to the boil and then turn the heat well down to let it simmer for about two hours. This way your beef will be very tender and full of flavour.

Most of the moisture will have been burned off so at this point you can add whatever vegetables you like to a pint of beef stock cube liquid (oxo)stir in curry powder to your taste. Add the stock and veg to the beef pot and let it simmer for another while.

Voila. You have traditional Irish beef curry.

Add chillis to the above receipe and you have traditonal Irish Mexican. Then depending on how you fold the tortia you decide what to call it.
