Ninja scroll will always be my favorite.

Also legend of the over fiend, which if you can handle the morbid violence is full of symbolism and different perspectives of spirituality and many other phylisophical subjects.

My first ever favorite anime was Shaman King so I guess that's hard to change. Followed by Bleach and last is Naruto.
