My favourite animes are Chobits, Elfenlied, Haibane Renmei, and Perfect Blue. I've also really enjoyed Now and Then, Here and There, Berserk, Fishuugi Yuugi, X: tv series, Angelic Layer, and anything from studio Ghibli.

My favorite has to be Elfen Lied. It's pretty recent, just released about four years ago, but I find it beautiful animation-wise and the psychological meaning to it is very interesting. You'd have to be pretty mature to appreciate this one for the psychology parts and not just for the blood and nudity. The latter is secondary for me. Amazing stuff right here.
