Question 1: What do you think Jesus looked like? (I know no one really knows what he looks like.)

Question 1a: How come there aren't any pictures of a "Hebrew" Jesus?

Jesus was Hebrew. Wouldn't all pictures of JC be Hebrew

I've seen many pictures of Jesus depicted as a blonde hair blue eyed male or a black male.

This is a picture of a first century Jew

if there was a Jesus he would have looked like this.

Black hair, brown beard?

Somewhere I heard a "warning" (wives tale, proverb, ancient Chinese secret...?) to not trust a man whose hair was one color and beard another.

I wonder about the origin of the warning. Did the warning ever have any pragmatic value?

I would say, "never trust a man who says he is only trying to help you".

Or, more succinctly, "never trust a man".

Or, Never trust a human.

Or, Always trust a human to do what is their own best interest.

I believe that I misunderstood the OP. The question was why is JC depicted in so many different ways?
Each social group understands the concept of a messiah based on their particular belief system and depictions are the result of that system. (i.e., Humans creates their Gods in their own image)
