I've recently gotten into studying German.
I'm just curious as to how the ß symbol is pronounced, and the words heißt and weiß.

The ß is pretty much pronounced as an S.

Words like heißt and weiß are pronounced the same way you'd pronounce hike or mice or any other word where the I sounds like "eye" and words like Sie, spiegel or die are pronounced with a long E, if that makes any sense.

That makes perfect sense!

It's not 'sorta' pronounced! It is pronounced like the English letter 'D' -- or as you've indicated, dee.
