1 pound of self raising flour
1 pound of mixed dried fruit
8oz sugar
8oz margerine.
3 large eggs
3-4 tablespoons of milk
Diced cherries,walnuts or almonds to sprinkle on the top.

Heat oven to 200 c. Place all ingredients ( except cherries/ nuts ) in a large bowl & mixed very well with food mixer. Place in a greased cake tin.Sprinkle the top with cherries or nuts. Bake in the centre of the oven approx 1 hour 15 mins.

I do something similar with pancakes, I just mix the dried fruit and nuts in the pancake batter, super yummy!
