Grow Mint, thats all you need for your sunday roast lamb.

Thats the only herb that tastes better fresh than the dried stuff.

I like to use dill when I stuff and bake a trout.

Gut the trout
Wash out the cavity
Stuff with a handful of dill, a good squeeze of lemon juice, salt, pepper add a little butter.
Wrap in foil
Bake in a moderate oven for 20-25 minutes

I use dill as follows:

With salmon especially.

Swedish style smoked salmon with dill

Poached/grilled/a la parilla salmon with dill or dill garlic mayo.

Sweet pickles with dill.

Or, one of the many herbs in the Greek dish of slow baked meat/chicken wrapped in paper.

Pan fry some salmon fillet.
Chop the dill up fine, put in a pan with a bit of butter and the juice of one lime and a teaspoon of sugar. Stir until melted

When the salmom is cooked drizzle it over the top.. it's delicious
