Cajun Potato Wedges

Cajun Potato Wedges
Categories: Cajun, Ethnic, Dixie, Southern, Side dish
Yield: 4 servings

1 tb Olive oil
1 tb Peanut oil
2 ts Cumin ground
1 ts Coriander ground
1 ts hot paprika
1 ts Turmeric ground
1/2 ts Oregano flakes
1/2 ts Black pepper ground
1/2 ts Chili powder
2 ea Egg whites slightly beaten
2 lb Potatoes cut to wedges

Pre-heat oven to 375 deg-F.
Prepare a large baking pan with cooking spray.
Whisk your olive oil, peanut oil, cumin, coriander, paprika, turmeric, oregano, pepper & chili powder together in a large bowl.
Put egg whites in a separate bowl.
Toss potato wedges first with your egg whites then with your oil mixture.
Arrange seasoed wedges in a single layer on your baking pan.
Bake for 40-45 mins. until crispy being sure to turn occasionally.
